Spiced Hot Chocolate
Recipe by Scott Campbell, Chef/Owner, Avenue NYC
Makes 6 servings
Ingredients
- 4 cups 1% lowfat chocolate milk
- 4 cinnamon sticks
- 1/8 teaspoon ground allspice
- 1/8 teaspoon nutmeg
- 1/4 cup sugar
- 6 ounces bittersweet chocolate chunks
- 1 tablespoon vanilla extract
- Whipped cream
Directions
Pour chocolate milk into a saucepan and bring to a simmer; add cinnamon, allspice, nutmeg and sugar, then remove from heat for 10 minutes. After spices have steeped into the milk, reheat the mixture to a very low heat and add chocolate chunks, stirring occasionally until melted (about 3 to 5 minutes.) Carefully pour mixture through a metal strainer to remove spices. Add vanilla to strained liquid. Pour into six mugs and top off with whipped cream.
