Fluffy White Flapjacks

Serves 4 (Makes 24 small pancakes)
Ingredients
- 1 1/2 cups plain nonfat yogurt
- 1 large egg
- 1 cup pancake mix
- 3/4 cup fat-free milk
Directions
In a bowl, combine yogurt and egg. Mix well. Add pancake mix and milk; blend just to combine. Lightly spray a nonstick pan or griddle. Ladle out 2 tablespoons batter per pancake. When edges are firm, turn pancake and cook 1 minute more. Serve immediately.
