Farmer's Cheese and Golden Raisin Cannolis With Vanilla Bean Vodka Sauce

Makes 6-8 servings
Ingredients
- 3 cups flour
- 1 TBSP sugar
- 3/4 cup white wine
- 1 egg yolk
- 1 TBSP salt
- 1 egg white
- Oil for frying
- 3 cups golden raisins, soaked in any liquor
- 16 ounces Farmer's cheese
- 1/3 cup sugar
- 2 ounces bittersweet chocolate
- 1/4 cup chopped pistachios
- 3 cups half-n-half
- 3/4 cup sugar
- 3/4 cup vanilla bean vodka
- 1 vanilla bean
- 12 egg yolks
Directions
Stir flour through salt until dough forms. Let rest for 3 hours. Roll out into 5-inch disks. Wrap dough around cannoli form, using beaten egg white to seal ends. Deep fry until golden brown. Let cool.
Mix raisins, cheese and sugar in large bowl. Place in pastry bag and fill each cannoli shell.
Dip ends of each cannoli into melted bittersweet chocolate. Roll ends in pistachios.
Heat half-n-half, sugar, vodka and scraped vanilla bean to scalding (do not boil.) Temper hot cream into egg yolks. Stir constantly over low flame for 3 minutes (do not boil.) Strain.
Serve each cannoli with small dish of vanilla vodka sauce for dipping.
