Crispy Ice Cream Sandwiches
Makes 9 servings
Ingredients
- 1/3 cup creamy peanut butter
- 1 tablespoon butter
- 1 (10 1/2 ounce) bag of mini marshmallows
- 6 cups of crispy rice cereal
- 3 cups lowfat vanilla ice cream (or any flavor)
Directions
Place ice cream in mixing bowl to soften while making the recipe. In a large pot over low heat, melt peanut butter and butter. Add marshmallows and stir until completely melted. Remove from heat and add in cereal, mix well. Press half of mixture into a 9-inch square baking dish coated with cooking spray. Spread ice cream evenly across cereal. Press remaining cereal mixture on top. Set in freezer for 1/2 hour or until set. Cut into 9 "sandwiches" and serve.
