Kickoff Kabobs with Honey Mustard Yogurt Dressing

Ingredients

    Kabobs:

    4 cups fresh vegetables, cut into 1-inch chunks (suggestions: red, yellow, or green bell peppers, cucumbers, zucchini, cherry or grape tomatoes, radishes, sweet onions, and mushrooms)
    8 ounces reduced-fat Cheddar cheese, cut into cubes

    Honey Mustard Yogurt Dressing:

    1 cup plain lowfat yogurt
    3 tablespoons Dijon mustard
    2 teaspoons honey
    1 teaspoon salt
    1 teaspoon sugar


Directions


For Kabobs:

Alternate vegetables and cheese cubes on skewer. Place on top of bed of Romaine leaves.  Serve with Honey Mustard Yogurt Dressing below for dipping.

For Honey Mustard Yogurt Dressing:

Stir all ingredients together until well blended. Store in refrigerator until ready to serve. Dip and enjoy!
